- 6 medium size potatoes
- 3 c. shredded Cheddar cheese
- 1/4 c. butter
- 1 1/2 c. sour cream (room temperature)
- 1/3 c. chopped green onions
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. butter
Directions

1Cook potatoes in skins; cool.

2Peel and shred coarsely.

3In saucepan over low heat, combine cheese and 1/4 cup butter, stirring occasionally, until almost melted.

4Remove from heat and blend in sour cream, onions, salt and pepper.

5Fold in potatoes and put into greased 2-quart casserole.

6Dot with 2 tablespoons butter.

7Bake 25 minutes at 350° or until heated through.

8Serves about 8 people.
