Governor'S Egg Casserole

Ingredients

  • 1 1/2 tsp. salt
  • 6 Tbsp. butter
  • 6 Tbsp. flour
  • 3 c. milk
  • 1 1/2 c. chopped onion
  • 3 c. grated sharp cheese
  • 2 c. crushed potato chips (approximately 6 oz.)
  • 18 hard-boiled eggs
  • 26 slices crisp bacon, chopped

Directions

    Cook onion in butter until tender.

    Blend in flour and add milk.

    Cook until thick.

    Add the cheese and stir until melted. In a 9 x 13-inch casserole, make layers of sliced eggs, cheese sauce, potato chips and bacon.

    Repeat.

    Bake at 350° for 30 minutes.

    May be refrigerated and baked next day.
