Graham Cracker Fruit Cake

Ingredients
- 18 oz. jar mixed candied fruit
- 18 oz. pitted dates
- 14 oz. candied cherries
- 1 1/2 c. chopped nuts
- 1 c. seedless raisins
- 1 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1 1/4 c. margarine
- 6 eggs, separated
- 1 c. coconut
- 2 Tbsp. orange rind
- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. ground mace
- 1 1/2 pkg. graham crackers
- 1 1/2 c. brown sugar
- 1/2 c. orange juice
Directions

1In large bowl, mix first 7 ingredients with 1/2 cup flour. Mix next 5 ingredients in rest of flour and stir in cracker crumbs.

2In another large bowl, beat margarine and sugar until creamy.

3Add egg yolks and beat until fluffy.

4Add cracker crumb mixture, blend well and stir into fruit mixture with juice.

5Beat egg whites stiff.

6Fold in cracker mixture, turn in well-greased 10-inch tube pan.

7Bake in preheated slow oven at 325° for 1 1/4 to 1 1/2 hours.

8Insert toothpick to see if done, cool in pan for 1/2 hour.

9Loosen in pan and turn on rack to cool.

10Garnish with candied fruit and wrap in foil to store.
