Graham Cracker Fruit Cake

Ingredients

  • 30 single graham crackers, crushed
  • 1 can Eagle Brand
  • 1 (7 1/4 oz.) pkg. dates, cut
  • 1 (16 oz.) pkg. mixed candied fruit
  • 3 c. finely chopped pecans
  • 1 pkg. orange peel (optional)
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 tsp. allspice
  • 1/4 tsp. cloves
  • 1 can Angel Flake coconut

Directions

    First, mix salt, cinnamon, allspice and cloves with graham cracker crumbs, then add fruit, dates and coconut.

    Mix well until coated good with crumbs.

    Add Eagle Brand and mix well.

    With a spoon, put into a loaf pan sprayed with Pam.

    Add a little mixture at a time; press evenly into pan with spoon so as not to have any air pockets.

    Continue until filled at least 3/4 full.

    Makes 1 small loaf and 4 mini loaves or 2 small loaves.

    Bake at 350° for 30 minutes.

    Cool completely in pan.

    Remove, cool and wrap in wax paper and foil to freeze or store in refrigerator.

    Best made a month ahead so to season.
