Graham Cracker Pudding

  • 20 graham crackers (double)
  • 1/2 c. sugar
  • 1/2 c. melted butter
  • 4 c. milk
  • 1 c. sugar
  • 1/4 tsp. salt
  • 3 eggs, separated
  • 2 heaping Tbsp. flour
  • 1 tsp. vanilla

Directions

    Roll graham crackers (or use a food processor).

    Mix with 1/2 cup sugar and butter.

    Line 9 x 13-inch pan with mixture, saving 1 cup for top of pudding.

    Cook milk, 1 cup sugar, salt, egg yolks, flour and vanilla until thick.

    Pour into lined pan.

    Cover with meringue made with the egg whites left from the pudding.

    Then cover with reserved crumb mixture.

    Bake for 15 minutes at 350°.
