  • 2 tablespoons cornstarch
  • 34 cup sugar
  • 1 cup boiling water
  • 14 cup fresh lemon juice
  • 1 tablespoon butter
  • 2 eggs
  • 1 pinch salt
  • lemon rind
  • 2 tablespoons sugar

Directions

    Combine cornstarch and sugar in a double-boiler.

    Add water slowly, stirring constantly.

    Cook until thick and smooth.

    Add slightly beaten egg yolks, butter, lemon rind, juice and a few grains of salt.

    Cook 2 minutes.

    Pour into shell and cover with meringue made of egg whites and 2 tablespoons of sugar.

    Bake @ 325 degrees for 20 minutes.
