  • 12 cup chopped walnuts
  • 1 (18 ounce) box spice cake mix
  • 1 (3 1/2 ounce) box instant butterscotch pudding mix (substitute vanilla, if you wish)
  • 4 eggs
  • 12 cup canola oil (or any vegetable oil)
  • 12 cup cold water
  • 3 medium granny smith apples, peeled, cored and coarsely chopped
  • 1 cup golden raisin (optional)
  • icing sugar, for garnish

Directions

    Preheat oven to 325F.

    Grease and flour a tube or bundt pan, then sprinkle walnuts in the bottom; set aside.

    In a large bowl, combine cake mix, pudding mix, eggs, oil and water; with mixer at medium speed, beat for 3 minutes or until well blended.

    Stir in chopped apples, plus raisins if desired.

    Pour batter into prepared pan and bake in preheated oven for 55 to 65 minutes or until a tester inserted in centre comes out clean.

    Cool in pan for 15 minutes, then turn out onto a rack and cool completely.

    Dust with icing sugar, if desired.
