Ingredients

  • 1 cup barley
  • 1 cup spelt, flakes
  • 1 cup old fashioned oats
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla
  • 1/4 cup honey
  • 1/2 teaspoon kosher salt
  • 1 tablespoon safflower oil
  • 1 cup almonds, sliced

Directions

    Preheat oven to 325-degrees F.

    In a bowl mix together first three ingredients (flakes - oats).

    Spread mixture onto a rimmed cookie sheet. Bake 30-40 minutes, turning every 10 minutes or so and mixture is golden brown.

    Transfer mixture to bowl and add remaining ingredients, tossing to coat.

    Return mixture to cookie sheet, spreading in an even layer.

    Bake for 20 minutes, stirring after 10 minutes, and mixture is golden brown.

    Let cool.

    Granola can be stored in a covered container for up to 3 weeks.
