- 3/4 cups Warm Water
- 2 teaspoons Granulated Sugar
- 2- 1/4 teaspoons Instant Yeast
- 1 Tablespoon Olive Oil Plus More For Brushing On Pan And Dough
- 1 teaspoon Salt
- 1- 1/2 cup All-purpose Flour
- 1/2 cups Whole Wheat Flour
- 1 Tablespoon Olive Oil
- 1/2 whole Red Onion, Thinly Sliced
- 1 clove Garlic, Minced
- 1/2 teaspoons Salt, Or To Taste
- 1/2 teaspoons Pepper Or To Taste
- 13 cups Pizza Sauce
- 1 cup Seedless Grapes, Halved
- 1/2 teaspoons Dried Rosemary (or Triple This Amount If Using Fresh Rosemary)
- 1/4 cups Balsamic Vinegar
- 2 Tablespoons Granulated Sugar
- 3 ounces, weight Crumbled Goat Cheese
- 1/2 cups Arugula
Directions

1Make the dough.

2Mix together the water, sugar, and yeast in a large bowl and let it sit for a few minutes.

3Stir in the olive oil and salt.

4Mix in the flours.

5Add more water or flour if it is too dry or too sticky.

6Knead the dough for about 5 minutes until it is smooth and pliable.

7Place the dough in a greased bowl, cover, and let it rise until doubled in volume, about 1-2 hours.

8After it has risen, refrigerate the dough for at least an hour, or overnight.

9Preheat the oven to 500 F. Divide the dough in half.

10Set aside one half of the dough for another use.

11On a floured surface, roll out the remaining half into a 10-inch circle.

12Place the dough onto a baking sheet greased with olive oil.

13Brush more olive oil on top of the pizza dough.

14Bake for 5-7 minutes, or until golden brown around the edges.

15Remove it from the oven.

16Let it cool for about 5 minutes.

17Prepare the toppings.

18Heat the oil in a saute pan over medium heat.

19Add the onions and garlic with the salt and pepper, and saute until slightly browned.

20Spread the pizza sauce over the crust.

21Scatter the grapes, onions, and rosemary over the pizza.

22Bake for another 10-25 minutes, or until the crust is a deep golden-brown.

23While the pizza is baking, make the balsamic vinegar syrup.

24Boil the vinegar and sugar in a saucepan over medium heat for about 5 minutes, or until it is reduced by about a third.

25Let cool.

26Once the pizza is cooked, remove it from the oven.

27Sprinkle the goat cheese and arugula on top.
