- 2 lb. dry pinto beans
- 2 onions, chopped
- 4 cloves garlic, chopped
- 2 tsp. salt
- 1/2 c. cumin
- 1/2 c. taco sauce
- 1/2 c. green chilies, diced
- 28 oz. can tomatoes
- pepper to taste
- lean ground beef, browned (optional)
Directions

1Wash and clean beans, then cover with water; simmer for 1 hour.

2Add all the other ingredients and cook on low heat for 2 hours more.

3If using ground beef, add at this time.

4For serving: Serve over brown rice; top with chopped lettuce, cheese or sour cream and salsa.

5Serve with tortilla chips.
