Ingredients
- 1 12 lbs potatoes
- water, to cover
- 1 cup flour
- 4 quarts water
- 1 egg
- 1 teaspoon salt
- 12 teaspoon granulated garlic
- 12 cup butter or 12 cup margarine
Directions

1Peel, quarter and rinse potatoes.

2Put in a large saucepan with enough water to cover.

3Boil 25 minutes or until soft enough to mash.

4Drain off liquid and mash with a potato ricer.

5Keep potatos in the saucepan and add flour.

6Beat egg, salt and garlic powder, add to potato and flour mixture.

7Beat well.

8Turn dough onto floured surface and knead about 10-12 times.

9Divide dough into quarters.

10Roll each quarter into ropes, cut into 3/4 inch pieces and roll each piece with a floured fork.

11Pieces should resemble little tubes with indentions of the tines.

12They look really professional when boiled.

13In a large pot, bring water to a boil.

14Add gnocchi pieces in small batches.

15When they're done, they will float to the top.

16Remove with a slotted spoon.

17Add butter to gnocchi.
-
18If desired, add parmesan cheese to the gnocchi.
