- 1 prepared pie crust
- 1 tablespoon butter
- 1 12 cups mushrooms, sliced
- 1 (4 ounce) jarsliced pimiento, drained
- 14 cup shallot, chopped
- 14 cup kalamata olive, chopped
- 2 eggs
- 12 cup milk
- 12 teaspoon dry mustard
- 14 teaspoon salt
- 14 teaspoon black pepper
- 12 cup feta cheese, crumbled
Directions

1Press pie crust into a 9 inch pie pan.

2Press into sides and bottom.

3Trim edges if needed.

4Line with a double thickness of foil.

5Bake in a 450 oven for 8 minutes.

6Remove foil and bake for 10 more minutes.

7Cool.

8Reduce oven temperature to 375.

9In a large skillet melt butter over medium-high heat.

10Add mushrooms; cook and stir for 4-5 minutes or until tender.

11Remove from heat.

12Stir in pimiento, shallots and olives.

13Spoon the mixture evenly into pre-baked tart shell and set aside.

14In a small bowl beat together eggs, milk, dry mustard, salt and pepper.

15Carefully pour over mushroom mixture.

16Bake for 20-25 minutes or until just set and a knife inserted into the center comes out clean.

17Sprinkle with cheese before serving.
