- 1/2 c. olive oil
- 1 lemon, juice only
- 1 tsp. oregano
- 1/4 c. butter
- 1 onion, thinly sliced
- 4 oz. feta cheese
- 1 lb. raw shrimp, peeled, butterflied
Directions

1Saute onion, lemon juice, oregano, butter in oil.

2Add shrimp and cook until pink.

3Before serving, add feta cheese in large chunks into hot mixture.

4Serve hot over pasta or rice or serve cold on romaine lettuce.
