Greek Bow-Tie Pasta Salad

  • 1 lb bow tie pasta
  • 12 cup extra virgin olive oil
  • 13 cup lemon juice (probably about one lemon's worth)
  • 1 tablespoon anchovy paste
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano leaves, crumbled
  • 1 pinch each salt and pepper
  • 1 English cucumber, diced
  • 2 cups small cherry tomatoes
  • 2 cups good quality black olives, pitted
  • 1 cup chopped red onion
  • 12 cup chopped fresh parsley
  • 1 cup finely diced feta cheese (about 4 oz/125 g)

Directions

    In a large pot of boiling salted water, cook pasta for 8 to 10 minutes or until almost tender but firm; drain well let cool.

    Meanwhile, whisk together oil, lemon juice, anchovy paste, garlic, oregano, salt and pepper; toss with pasta.

    Add tomatoes, sliced olives (leave whole if small), cucumbers, onion and parsley; toss to coat well.

    Gently stir in feta cheese.

    Chill until ready to eat.
