  • 3/4 c. butter
  • 3 c. coarse bulgur (cracked wheat)
  • 2 onions, finely chopped
  • 6 c. chicken or beef broth (or mixed)
  • 2 tsp. salt
  • 2 tsp. pepper
  • 1 tsp. curry powder
  • 1 c. pine nuts

    Melt 1/2 cup butter in skillet.

    Add dry bulgur; saute well. In a separate pan, saute onion in 1/4 cup butter until yellow gold.

    Mix with bulgur.

    Add broth, seasonings and nuts.

    Stir well.

    Bake in an uncovered casserole at 375° for 30 minutes. Adjust seasonings and stir.

    Bake 10 minutes longer.

    (This freezes well or keeps in refrigerator 2 days.)
