- 2 Tablespoons Olive Oil
- 1 Tablespoon Minced Garlic
- 10 ounces, weight Fresh Spinach, Washed, Dried, And Stems Removed
- 1 pinch Kosher Salt
- 2 whole Flatbreads
- 1 cup Mozzarella Cheese, Shredded
- Feta Cheese Crumbles, To Taste
- Handful Grape Tomatoes, Cut In Half
- Handful Pitted Black Olives, Cut In Half
- 1 whole Thin Slice Red Onion, Separated Into Rings
Directions

1Heat the olive oil in a deep skillet on medium high heat and add the garlic.

2Saute for about 1 minute.

3Add the spinach and toss to coat in the garlic oil.

4Saute for another 2-3 minutes, or until the spinach is wilted.

5Season with a pinch of kosher salt.

6Preheat oven to 425 degrees F. Lay both pieces of flatbread on a cookie sheet.

7Top each flatbread with half the spinach, then half the mozzarella cheese.

8Sprinkle with as much feta as desired.

9Then top each flatbread with half the tomatoes, olives, and a few slices of red onion.

10Bake at 425 degrees F for 8-10 minutes, or until cheese is melted and flatbreads are golden brown.

11Cool for a few minutes before slicing.
