- 3 thin lemon slices
- 1/4 tsp. garlic powder
- 1/4 tsp. ground ginger
- 1/4 tsp. dried mint leaves
- few drops of red pepper sauce
- 1/4 lb. lamb boneless shoulder, cut into 1-inch cubes
- 1 wooden skewer
- 2 colossal pitted black olives
- 1/2 small onion, cut in half
- 3 large cherry tomatoes
Directions

1In a small bowl, combine olive oil, lemon slices, garlic powder, ginger, mint leaves and red pepper sauce.

2Microwave at High 30 to 60 seconds, or until heated through and lemon is tender.

3Add lamb cubes to bowl; cover.

4Marinate at room temperature for 1 hour.
