- 2 lb. fresh spinach
- 5 eggs
- 2 c. crumbled Feta goat cheese
- 1 c. cottage cheese
- 1/2 c. grated Cheddar cheese
- 1 stick butter
- 1 pkg. defrosted filo dough
Directions

1Clean, stem and chop spinach.

2Beat eggs in large bowl and add spinach and cheeses.

3Melt butter and begin by spreading in the bottom of a 9 x 13-inch baking pan.

4Place 2 strudel leaves on bottom and brush lightly with butter.

5Keep going with 4 layers. Spread on half the filling, 4 more layers buttered, then the rest of filling.

6Top with as many layers of dough as can fit.

7Butter the top and sprinkle with wheat germ.

8Bake at 350° about 45 minutes, until golden.
