  • 2 lb. fresh spinach
  • 5 eggs
  • 2 c. crumbled Feta goat cheese
  • 1 c. cottage cheese
  • 1/2 c. grated Cheddar cheese
  • 1 stick butter
  • 1 pkg. defrosted filo dough

Directions

    Clean, stem and chop spinach.

    Beat eggs in large bowl and add spinach and cheeses.

    Melt butter and begin by spreading in the bottom of a 9 x 13-inch baking pan.

    Place 2 strudel leaves on bottom and brush lightly with butter.

    Keep going with 4 layers. Spread on half the filling, 4 more layers buttered, then the rest of filling.

    Top with as many layers of dough as can fit.

    Butter the top and sprinkle with wheat germ.

    Bake at 350° about 45 minutes, until golden.
