Greek Salad With Butterbeans

Ingredients

  • 400 g chopped tomatoes
  • 50 g olives, halved and pitted
  • 1 bunch of fresh mint, chopped
  • 1 bunch fresh parsley, chopped
  • 820 g butter beans, drained and well rinsed
  • 3 tablespoons olive oil
  • 2 red onions, thinly sliced
  • 2 garlic cloves, finely chopped
  • 3 tablespoons fresh lemon juice
  • 200 g feta cheese, cut into cubes
  • bread, sliced and lightly toasted

Directions

    Put tomatoes, Olives, Mint, Parsley and beans in a large bowl and toss to combine.

    Put oil in pan set over medium head, add onions and garlic when they start to sizzle in oil remove from heat and pour over tomato mixture.

    Stir in lemon juice and add the feta season to taste with salt and pepper and toss well to combine.

    Set aside for 30 Minutes to allow flavours to infuse.

    Toss again at room temp with toasted bread and drizzle of oilve oil.
