- 1/2 pounds Mushrooms
- 2 whole Garlic Cloves
- 1 whole Shallot
- 2 whole Tomatoes
- 1 whole Sheet Of Puff Pastry, Thawed
- 2 Tablespoons Butter
- 2 Tablespoons Olive Oil
- 1/2 teaspoons Dried Basil
- 1/2 Tablespoons Dried Oregano
- 2 cartons Fresh Spinach (or I Used Arugula)
- 1/2 whole Lemon, Juiced
- 1 cup Shredded Mozzarella Cheese
- 1/2 cups Crumbled Feta
- 1/2 cups Fine Breadcrumbs
- Fresh Basil, For Garnish (optional)
Directions

1Preheat oven to 375F.

2Slice the mushrooms and mince the shallot and garlic.

3Slice tomatoes.

4Set these aside.

5Unfold the sheet of puff pastry and place it on a greased baking sheet.

6Melt butter and brush it onto the pastry.

7Heat any remaining melted butter and olive oil in a skillet over medium heat.

8Add mushrooms, shallot and garlic.

9Cook until softened.

10Add basil, oregano, spinach and lemon juice to pan.

11Stir and cook until spinach is wilted.

12Remove from heat.

13Spread mushroom mixture onto puff pastry.

14Top with mozzarella and feta cheese.

15Dip the tomatoes in a bowl of bread crumbs to cover them on both sides.

16Place tomatoes on top of cheese.

17Bake the pizza for 25-30 minutes.

18Remove from oven, then top with sliced fresh basil if you have some on hand.
