Greek Style Quinoa

  • 1 Cup Quinoa
  • 2 Cup Water
  • 1 1\2 Teaspoon Salt
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Lemon
  • 1/4 teaspoon Ground Pepper
  • 1/4 cup Kalamata Olives, pitted and chopped
  • 1/2 cup Garbanzo Beans, rinsed
  • 1/4 cup Tomato sliced
  • 1/2 cup Feta (crumbled)
  • 2 teaspoon Basil (chopped)

    1. Wash Quinoa

    2. Stir Together Water, 3/4 tsp. Salt, and Quinoa in a Saucepan. Simmer uncovered until Quinoa is tender and germ starts to separate from grain about 20 minutes.

    3. Drain well in sieve and transfer to medium bowl.

    4. Cool Quinoa. (15 minutes)

    5. While Quinoa is cooling, stir together lemon, basil, pepper, tomato in small bowl.

    6. When Quinoa is cool, stir lemon mixture, garbanzo, olives & feta together with the Quinoa. Serve!
