  • 4 lbs pork, cubed
  • 28 ounces green chilies, chopped
  • 28 ounces green enchilada sauce
  • 1 onion, chopped
  • 2 tablespoons ground cumin
  • 1 tablespoon minced garlic
  • salt and pepper

Directions

    Cube the pork and brown with the onion.

    Add the remaining ingredients and simmer for two hours on low or until soft.

    Serve in a bowl with sour cream and or cheese as garnishes or wrapped in a flour tortilla.

    Eggs the next day are dynamite with this as a wrap.

    Hotter palettes can add some chopped jalapenos and green Tabasco like I do.
