Green Chili Cornbread

  • 1 can cream-style corn
  • 1 (4 oz.) can green chilies
  • 2 eggs
  • 3/4 c. milk
  • 3/4 c. corn meal
  • 1 tsp. salt
  • 1/2 tsp. soda
  • 1/3 c. oil
  • 1 1/2 c. sharp cheese, grated

Directions

    Chop chilies fine and grate cheese.

    Preheat oven to 375°. Mix together the corn, slightly beaten eggs, oil and milk.

    In separate bowl, mix the corn meal, soda and salt together.

    Pour 1/2 the cornbread in 9-inch pan, then add chilies and cheese. Pour the rest of the mix over it.

    Bake for 45 minutes.
