  • 3 None green peppers, deseeded and cut into wide strips
  • 1/4 lb white bread, diced
  • 1 None cucumber, diced
  • None None juice of 1 lemon
  • 1 clove garlic, crushed
  • 1 None onion, diced
  • 4 tbsp olive oil
  • None pinch sugar

Directions

    To roast the pepper, preheat your oven's broiler. Place the pepper skin-side up on a baking sheet and broil for 5-6 mins, until the skin blisters. Remove from the oven and wrap in cling wrap. Unwrap and remove the skin.

    To assemble the soup, place all of the ingredients in a food processor with 1/2 cup water and season. Blend until smooth and serve at room temperature or chilled.
