Ingredients
- 2 or 3 lb. beef chuck or round steak, fat trimmed
- 1/4 c. soy sauce
- 1 clove garlic
- 1/2 tsp. ground ginger
- 2 Tbsp. salad oil
- 1/2 c. green onion, thinly sliced
- 1 c. red and/or green peppers, cut into 1/2-inch squares
- 2 stalks celery, thinly sliced
- 1 Tbsp. cornstarch
- 1 c. water
- 2 tomatoes, cut into wedges (can be omitted)
Directions

1With a very sharp knife, cut beef across grain into thin strips, 1/8-inch thick.

2Combine soy sauce, garlic and ginger. Add beef.

3Toss and set aside while preparing vegetables.

4Heat oil in large frying pan or wok.

5Add beef and toss over high heat until browned.

6Cover and simmer for 40 to 60 minutes over low heat.
