  • 1 c. rice, cooked in salted water
  • 1/2 pkg. frozen chopped spinach
  • 1 c. finely chopped onion
  • 2 Tbsp. butter
  • 3/4 c. grated Parmesan
  • salt
  • pepper

Directions

    Cook spinach and drain well. Saut onions in butter. Layer in casserole: rice, spinach, onion, cheese (reserve 3 tablespoons), salt and pepper. Repeat about 3 times. Sprinkle reserved cheese on top. Bake at 350° for 20 to 30 minutes. Serves 6 to 8.
