- 1 tablespoon olive oil
- 1/2 onion chopped
- 1 cup white rice
- 1 clove garlic
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped parsley
- 2 poblano peppers roasted, peeled, and deveined
- 2 cups chicken broth
- salt
Directions

1In a skillet over medium heat, saute the onion in olive oil for about one minute. Add the rice. Continue cooking until the onion becomes soft and translucent. Set aside.

2In a blender, add the garlic, coriander, parsley, and poblano chilis. Add half of the chicken broth. Strain.

3Add the chili mixture and the remaining chicken broth to the rice.

4Season as needed. Cover and cook over low heat until the water has been absorbed, about 15 minutes.

5Garnish with coriander and serve.
