- 2 c. uncooked rice or 4 c. Minute rice
- 1/2 to 1 lb. grated Cheddar cheese
- 1 c. bell pepper, chopped
- 1 small can green chilies
- 1 c. chopped parsley
- 2 cloves garlic, chopped
- 1 large onion, chopped
- 1/2 c. milk
- 1/2 c. oil
- salt and pepper to taste
Directions

1Preheat oven to 350°.

2Cook rice. While rice is still hot, add the cheese. Mix well. Add the bell pepper, chilies, parsley, garlic and onion.

3Fold in the milk, oil, salt and pepper. Put in lightly oiled casserole and bake for 1 hour.
