Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 14 cup packed fresh basil leaf
  • 14 cup packed dill sprigs
  • 14 cup packed parsley sprig
  • 4 ounces fresh spinach
  • 14 cup plain yogurt

Directions

    In small bowl, blend oil, mustard, lemon juice, garlic, salt and pepper until well mixed.

    In food processor or blender, process basil, dill and parsley until minced.

    Add spinach; process until pureed and smooth.

    Add yogurt.

    With machine running, gradually add oil mixture; process until thick mayonnaise consistency.

    Refrigerate.

    Serve over grilled fish.
