- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 12 teaspoon salt
- 12 teaspoon pepper
- 14 cup packed fresh basil leaf
- 14 cup packed dill sprigs
- 14 cup packed parsley sprig
- 4 ounces fresh spinach
- 14 cup plain yogurt
Directions

1In small bowl, blend oil, mustard, lemon juice, garlic, salt and pepper until well mixed.

2In food processor or blender, process basil, dill and parsley until minced.

3Add spinach; process until pureed and smooth.

4Add yogurt.

5With machine running, gradually add oil mixture; process until thick mayonnaise consistency.

6Refrigerate.

7Serve over grilled fish.
