  • 2 lb. green tomatoes
  • salt
  • 3 tbsp. extra-virgin olive oil
  • 2 clove garlic
  • 1 tsp. red pepper flakes
  • 18 butter-flavored crackers (such as Ritz)
  • 2 oz. Parmesan
  • 2 tbsp. chopped fresh marjoram

    Preheat oven to 425 degrees F. Meanwhile, sprinkle tomatoes with 1 1/2 teaspoons salt.

    Place tomatoes in a single layer in an oiled 9- by 13-inch baking dish.
