  • 1 1/2 c. sugar
  • 5 Tbsp. all-purpose flour
  • 1 tsp. ground cinnamon
  • 1 Tbsp. butter or margarine
  • pinch of salt
  • 3 c. thinly sliced green tomatoes (about 4 to 5 medium)
  • 1 Tbsp. cider vinegar
  • pie pastry for 9-inch double crust

Directions

    In bowl, combine sugar, flour, cinnamon and salt.

    Add tomatoes and vinegar; toss to mix.

    Line pie plate with bottom crust.

    Add filling and dot with butter.

    Top with lattice crust. Bake in 350° oven for 1 hour or until tomatoes are tender.
