Green Tomato Pie

Ingredients
- 8 cups green tomatoes sliced *
- 2 each onions sliced
- 2 cloves garlic sliced
- 3 tablespoons vegetable oil
- 1 x pie shell (9 inch) unbaked, frozen *
- 3 tablespoons parsley leaves chopped
- 2 tablespoons flour, all-purpose
- 2 Teaspoons salt
- 1/4 teaspoon black pepper
- 1 cup cheddar cheese shredded
Directions

1** If homemade pie crust is used, freeze the crust prior to filling with tomato mixture.

2In large skillet heat oil, add onions and garlic.

3Saute until tender, about 3 to 5 minutes.

4Add tomatoes.

5Cook over medium-high heat until soft, about 15 minutes, stirring occasionally.

6Sprinkle on parsley, flour, salt and black pepper and stir until well mixed.

7Cool.

8Spoon into frozen, unbaked pie shell.

9Sprinkle with cheese.

10Bake 20 minutes or until browned in 375-degree oven.

11Cool 5 minutes before serving.
