Ingredients

  • 12 slices (thick) fresh tomatoes or 1 large can Italian tomatoes
  • 2 pkg. frozen chopped spinach
  • 1 c. seasoned bread crumbs
  • 6 chopped green onions
  • 6 eggs, slightly beaten
  • 1/2 c. melted butter
  • 1/4 c. Parmesan cheese
  • 1/4 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. thyme
  • 1 tsp. MSG (optional)
  • 1/4 tsp. hot pepper sauce

Directions

    Cook spinach as directed.

    Add remaining ingredients to spinach, except tomatoes, and cook over low heat until eggs are cooked.

    Arrange tomatoes in a single layer in a buttered baking dish, 9 x 13.

    Top with spinach mixture and bake at 350° for 15 minutes.
