- 2 c. self-rising flour
- 2 c. sugar
- 1 c. oil
- 3/4 c. milk
- 5 eggs
- 1 1/2 tsp. vanilla
Directions

1Cut 10 to 12 circles of wax paper size of griddle.

2Preheat oven and cast-iron 8-inch or 9-inch griddle to 425°.

3Be very careful; griddles are always hot during this process.

4Dump all ingredients together and beat on High until lumps are dissolved and batter is bubbly.

5Put one sheet of wax paper in griddle and pour about 1/2 cup batter in.

6Bake 3 to 8 minutes or until spongy feeling.

7Do not wait for top to turn very brown.

8Loosen edges from paper with spatula or case knife.

9Turn that layer out onto plate and repeat.

10While the next layer is coking, spread a thin layer of icing on previously cooked layer and be ready for next one.
