Grilled Pineapple

  • 1 whole Pineapple
  • 1 cup Lime Juice
  • 1 cup Brown Sugar

    Slice pineapple into 1/2 inch pieces and place in a big bowl with a snap on lid.

    Pour on the lime juice and brown sugar.

    Snap on the lid, and shake.

    Allow this to marinate in the fridge, shaking it and turning it upside down every so often.

    Toss marinated pineapple on the grill, turn once during the cooking process.

    The brown sugar and lime, as well as the pineapples natural sugars get all caramel-y and the warm softened pineapple is super juicy!

    This can also be refrigerated, and eaten cold.

    A whole pineapple can be an intimidating thing.

    I was intimidated anyway.

    Youll need to take a good sharp knife, like a chefs knife, and cut off the stem and the bottom of the pineapple.

    I try not to take of more than an inch.

    Then you are going to want to slice it in half lengthwise.

    I stand the pineapple up on its (now flat) end and slice from top to bottom.

    Then I lay it on its (now flat) side and slice it in half again, lengthwise.

    The pineapple is now quartered.

    If you have something different, my descriptive skills are lacking!

    Each pineapple comes with a very tough core which should be removed as it is no fun to bite into.

    Keep each quarter laying on its side and just angle your knife to remove about 1/2 inch of what used to be the middle of the pineapple.

    Now just slice it into 1/2 inch pieces and place it in a big bowl, this bowl should have some sort of a snap on lid.

    Next you are going to pour on the lime juice and brown sugar.

    Snap on the lid, and shake.

    Allowing this to marinate in the fridge is a good idea, and shaking it, turning it upside down, or whatever is a good idea as well.

    Whenever you are ready, just toss it on the grill.

    I find that it works at whatever temperature I happen to be grilling at, just keep and eye on it and turn it over once during the cooking process.
