- 1 tablespoon dark brown sugar
- 1/2 teaspoon ground chipotle chile pepper
- 1/4 teaspoon salt
- 1 pineapple, cored, cut into 1/2 inch-thick slices
- 2 tablespoons toasted sesame oil
- 3 scallions, sliced
- 1 garlic clove, minced
- 4 cups cooked rice, preferably basmati
- 1/2 teaspoon salt
Directions

1Prepare grill for direct-heat cooking.

2Combine sugar, chile pepper and salt; sprinkle over both sides of pineapple slices.

3Grill, turning once, until browned, 3 minutes per side. Cool slightly; cut into chunks.

4In large nonstick skillet heat oil over medium heat; add scallions.

5Cook, stirring, until golden, 3 minutes.

6Stir in garlic; cook 1 minute. Add rice, salt and pineapple; cook, stirring, until heated.
