  • 2 1/4 c. biscuit mix, divided
  • 1/2 c. cold water
  • 1 (14 1/2 oz.) squeeze bottle pizza sauce
  • 1 (3 1/2 oz.) pkg. sliced pepperoni
  • 1 (8 oz.) pkg. shredded Mozzarella cheese
  • vegetable cooking spray

Directions

    Combine 2 cups biscuit mix and water, stirring to make a soft dough.

    Turn out onto a surface dusted with remaining biscuit mix; roll dough to coat and shape into a ball, kneading gently five times.

    Divide into 4 equal portions; pat each portion into a 5-inch circle.

    Cover grill rack with heavy-duty aluminum foil. Place circles on foil; cook over medium-hot (350° to 400°) for 8 minutes.

    Turn over; top with pizza sauce, pepperoni and cheese. Cover with foil coated with cooking spray.

    Cook for 10 to 12 minutes, or until edges are brown and cheese melts.
