Ingredients

  • 12 ripe jalapenos
  • 1/2 pound of cheddar cheese
  • 1/4 pound of thinly sliced bacon
  • 1 avocado
  • 1/2 cup fresh cilantro
  • juice of half of a lime
  • 1/4 small red onion

Directions

    1. remove tops from avocados and carefully remove seeds.

    2. add one diced avocado, cilcantro, lime and onion to a bowl and mix into a smooth consistency.

    3. add a teaspoon of avocado mixture into the jalapeno. pressing all the way in.

    4. slice cheese into sticks that fit into each avacado and place inside each jalapeno, pushing all of the way in.

    5. cut bacon in half and place middle of slice over opening in the jalapeno. wrap both sides down to the bottom and secure with toothpick.

    6. grill on med-low heat rotating every 5 minutes until bacon is cooked.

    7. remove toothpick sna eat.
