  • 1 lb. potatoes, peeled and cut up
  • 1 medium red or green pepper, cubed
  • 1 Tbsp. olive oil
  • 1 tsp. dried whole rosemary, crumbled
  • 1 clove garlic, minced
  • 1/8 tsp. crushed red pepper flakes (optional)
  • 1/2 tsp. salt (optional)

Directions

    Combine potatoes, pepper and onion in large bowl; set aside. Heat oil, rosemary, garlic and pepper flakes together in small saucepan.

    Toss oil mixture with vegetables.

    Sprinkle with salt. Place vegetables on a large, square of heavy-duty aluminum foil. Seal well.

    Place foil package on grill over medium to hot coals. Cook 45 minutes, turning once.
