- 1 lb. potatoes, peeled and cut up
- 1 medium red or green pepper, cubed
- 1 Tbsp. olive oil
- 1 tsp. dried whole rosemary, crumbled
- 1 clove garlic, minced
- 1/8 tsp. crushed red pepper flakes (optional)
- 1/2 tsp. salt (optional)
Directions

1Combine potatoes, pepper and onion in large bowl; set aside. Heat oil, rosemary, garlic and pepper flakes together in small saucepan.

2Toss oil mixture with vegetables.

3Sprinkle with salt. Place vegetables on a large, square of heavy-duty aluminum foil. Seal well.

4Place foil package on grill over medium to hot coals. Cook 45 minutes, turning once.

5Yields 4 cups/servings.
