  • extra-large shrimp, preferably with heads on

    Belly up, slice the shrimp down the middle, cutting through the shell and into the flesh no more than 1/4 inch deep. Rub inside and out with salt, pepper, and olive oil. Place on grill or under broiler. Turn once and continue cooking until flesh is white. Caution: Watch carefully, since these take only a minute or so to cook.
