Grits Casserole

  • 1 qt. milk
  • 1/2 c. butter
  • 1/3 c. butter
  • 1 c. hominy white grits
  • 1 c. grated Gruyere cheese
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/3 c. grated Parmesan cheese

Directions

    Bring milk to boil and add 1/2 cup butter, salt, pepper and grits.

    Cook until thick.

    Beat 5 minutes with electric beater. Pour into pan; cool and cut into slices and place in casserole like fallen dominoes.

    Mix 1/3 cup melted butter and both cheeses and pour over top.

    Bake, foil covered, at 400° for 45 minutes and uncover last 5 minutes.

    Freezes well.
