- 1 1/2 c. rice
- 1 1/2 c. chopped green pepper
- 3/4 c. chopped onion
- 3 Tbsp. salad oil
- 1/4 c. cornstarch
- 2 c. chicken broth
- 3 Tbsp. soy sauce
- 2 c. cooked chicken
- 3 ripe tomatoes or 1 can, drained
Directions

1Cook onion and pepper in oil slow but not brown.

2Blend cornstarch with small amount of chicken broth.

3Add remaining broth and soy sauce.

4Stir chicken and broth in.

5Add tomatoes and heat.

6Serve over rice.
