Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped
  • 1 yellow or orange bell pepper, chopped
  • 2 tbsp plus 2 teaspoons chili powder
  • 1 large clove garlic, minced
  • 1 jalapeAao pepper, seeded and chopped
  • 1 can (28 ounces) diced tomatoes undrained
  • 1 can (8 ounces) tomato sauce
  • 1/2 tsp ground cumin
  • 1/2 tsp dried marjoram
  • 1/4 tsp dried thyme
  • 1 can (15 ounces) light or dark kidney beans (drained and rinsed)

Directions

    Cook first 2 ingredients in a large skillet until meat is browned and onions have softened.

    Drain off excess fat.

    Add cooked beef, onions and the rest of the ingredients to a stock pot, mix well; bring to a boil.

    Cover and reduce heat and simmer, stirring occasionally for one and a half to two hours.
