Ground Beef Soup

- 1 lb. ground chuck
- 1 small onion, chopped
- 20 oz. tomato juice
- 2 medium potatoes
- 2 carrots
- 1 c. celery, chopped
- 1/4 c. rice (optional)
- 1/4 c. corn (optional)
- 1/4 c. peas (optional)
- 1/4 c. green beans (optional)
Directions

1Place beef and onion in skillet and fry until done.

2Drain. Place in a heavy saucepan and add desired vegetables, cover with water and cook until vegetables are tender.

3Add tomato juice and season with 1 teaspoon each salt and pepper.

4Bring to a boil and simmer about 30 minutes.
