Ingredients
- 3 Tbsp. oil
- 2 lb. beef cubes (1-inch or smaller), rolled in flour
- 1/2 tsp. nutmeg
- 1 Tbsp. chili powder
- 4 medium onions
- 1 clove garlic, minced
- 3/4 c. tomato paste
- 6 c. water
- red pepper
- 1/2 c. chunky peanut butter
- 2 Tbsp. oil
Directions

1In large skillet, heat the 3 tablespoons of oil.

2Add the beef.

3While browning, add the nutmeg and chili powder.

4When meat is browned, add the onions, garlic, tomato paste, water and pepper.

5Simmer until meat is tender.

6A half hour before serving, heat the peanut butter and remaining oil in small saucepan.

7Stir over medium heat for 5 minutes.

8Add peanut butter mixture slowly to beef stew; simmer 20 minutes.

9Serve over rice.
