Ingredients

  • 1 cup Fresh Or Frozen Shelled Edamame. Thawed If Frozen.
  • 4 whole Avocado
  • 1/2 whole Red Onion, Finely Minced
  • 1 whole Jalapeno, Seeded And Finely Minced
  • 1 whole Tomato, Seeded And Chopped Fine
  • 2 whole Limes, Juiced
  • Salt To Taste

Directions

    In the bowl of a food processor place the edamame and process until nearly smooth.

    Peel and dice the avocado and place in a mixing bowl.
  3. 3
    Add the minced onion, jalapeno, tomato and mash with the tines of a fork until you acheive a fairly smooth paste; you do want a few lumps here and there of avocado.

    Fold in the edamame.

    Add the lime juice and then season to taste with salt.

    Cooks note: If you dont want too much spice then only use half a jalapeno and make certain to remove the seeds and ribs.

    Wear gloves if you are not used to handling chilies.

    If youre not a fan of lime, then only use 1 lime.
