  • 2 large ripe avocados, seeded, peeled and cut up
  • 1/4 c. loosely packed fresh cilantro
  • 2 Tbsp. finely chopped onion
  • 1 or 2 jalapeno peppers, seeded
  • 1 or 2 cloves garlic
  • 2 Tbsp. lime juice
  • 1/4 tsp. salt

Directions

    In a blender or food processor combine avocados, cilantro, onion, peppers, garlic, lime juice and salt.

    Cover and blend until nearly smooth, stopping and scraping as necessary.

    Transfer mixture to a bowl.

    Cover with plastic wrap directly touching the surface to prevent darkening.

    Chill for up to 24 hours if needed. Makes 1 3/4 cups.
