Ingredients

  • 3 cups cooked pasta (whatever type you like)
  • 1 avocado
  • 2 -4 tablespoons lemon juice or 2 -4 tablespoons lime juice
  • salt and pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup low-fat jalapeno cheddar cheese, shredded (or whatever type you like, feta might be nice)
  • 1/2 teaspoon chili powder
  • 5 drops liquid smoke (optional)
  • 2 tablespoons salsa (optional)
  • 2 tablespoons low-fat sour cream (optional)
  • 2 teaspoons tequila (optional)
  • 1 teaspoon onion, minced (optional)
  • 2 tablespoons pitted ripe olives (optional)

Directions

    Prepare pasta according to package directions.

    In the meantime, add avocado, lemon or lime juice, salt, pepper, garlic powder, cheese, chili powder (and the optional liquid smoke, salsa, sour cream, tequila, onion, and olives if using) to a food processor.

    Blend until smooth.

    Adjust seasonings to taste. You may need a few tablespoons water to get it to blend smoothly.

    Stir sauce into hot pasta; mix until cheese melts and everything is warmed through.

    Serve with a margarita!
