Ingredients
- 1 lb. bacon, chopped into small pieces
- 3 garlic cloves, chopped
- 1 c. chopped green onions
- 3 eggs, slightly beaten
- 3 c. cooked, cooled rice
- 1 c. ham, diced thinly
- 1 can broken or chopped shrimp
Directions

1Fry bacon until crisp.

2Remove bacon and pour off half the bacon fat.

3Fry garlic.

4Remove and discard.

5Fry onion in same fat.

6Remove and add to bacon.

7Spread eggs on bottom of pan as if preparing to make an omelet.

8Remove to plate.

9Add cold rice and stir until all grains are coated with grease and not sticking together.

10Add bacon, onion and ham.

11Mix well, always scraping bottom of pan to prevent sticking.

12Turn heat to low and add chopped egg pieces.

13Add shrimp.

14Remove from heat and serve. Makes 6 to 10 servings.
