Ingredients

  • 2 tbsp. salad oil
  • 1 c. minced onion
  • 1 c. minced green pepper
  • 1/2 c. minced celery
  • 1 clove minced garlic
  • 1 bay leaf
  • Dash oregano
  • Grnd black pepper to taste
  • 1 (1 lb., 12 ounce.) can whole tomatoes, cut in chunks
  • 1 (13 ounce.) can chicken broth
  • 1 (10 ounce.) pkg. frzn okra, cut in 1/2 inch slices
  • 1 pound raw shrimp, peeled and deveined
  • Louisiana warm sauce (optional)
  • Fresh minced parsley
  • Cooked rice

Directions

    In large stock pot, heat oil and saute/fry onion, green pepper, celery and garlic till soft.

    Add in bay leaf, oregano, pepper, tomatoes, and chicken broth.

    Simmer about 30 min, uncovered.

    Add in okra, cover and simmer 15 min.

    Add in shrimp, cover, and simmer 3-5 min till shrimp is just done.

    Add in warm sauce to taste, if you like.

    Serve over rice and sprinkle with parsley.
